It might be time to throw in the spatula. The last two months of cooking have been rough. In an attempt to diversify our meals and get out of a rut, I’ve tried more new meals the last two+ months. Bombed. Some have been bad, some awful!

So, if you have some winner recipes from your kitchen or your family’s please post! Help needed! Thanks in advance 🙂

    Layered Enchiladas are always a hit around my house. My mother-in-law is a fabulous cook and this is one of her recipes. I’m not sure if it’s ever actually been written, but it’s an easy one.

    Layered Enchiladas:

    one can enchilada sauce (larger can if making more than 4 servings)
    corn tortillas
    sour cream
    green onions, sliced
    black olives, sliced
    shredded cheese

    Heat the enchilada sauce (medium) in a saucepan. Dip a tortilla in the sauce, then transfer to a cookie sheet. (I generally give it a light coating of cooking spray.) Add a bit of sour cream, cheese, green onions, olives, etc. on top. Coat another tortilla with the sauce and repeat for 3 layers. We usually get about six stacks (servings) per cookie sheet. Toss in the oven (about 350) for a few minutes- until the cheese is melted. Ta-da!
